I am so excited to make this soup. The best Mulligatawny soup I have ever had was in NYC in a tiny Indian restaurant on 4th Avenue between 11th & 12th Street. I think I got that soup at least once or twice a week for lunch, since I worked on 13th and Broadway, only a couple of blocks away. That little restaurant is long gone, but the memory of their Mulligatawny Soup lives on. 


As you may have guessed Mulligatawny is a traditional Indian soup that is made with red lentils, curry, many spices and sometimes chicken or can remain vegetarian. I always do this soup as vegetarian, it retains a full vibrant flavor but is also warm, hearty and comforting. This soup will be slightly spicy and you will not be able to stop eating it.
