Roasted Eggplant, Roasted Garlic & Tomato

(vegetarian, gluten free, dairy free)

This is a new and exciting soup i could not wait to get started on. I argued with my husband about calling it "Roasted Eggplant, Roasted Garlic" but hey, i'm the boss here. My point being, there is a huge difference between actually roasting a head of garlic with good olive oil and herbs as opposed to chopping some garlic and adding it to a pot with olive oil. I'm sure you will agree once you taste the final product. Roasting Eggplant provides a unmistakable smokey flavor. The inspiration for this soup comes from my homeland, Trinidad, where we prepare a dish called Eggplant Choka. Preparation involves roasting tomatoes and garlic-stuffed-eggplant over an open flame until charred. It's really an incredible dish.
