Roasted Red Pepper Soup

"Roasted Red Pepper Soup", inspired by one of my favorite cook book authors Patricia Wells. I had the pleasure of meeting Patrica Wells while I worked in Philadelphia at the restaurant, Dock Street Brasserie way back in 1999, where The Book & The Cook event took place annually. At that time, Ms. Wells had just written her cookbook, At Home in Provence. This pepper soup is vegetarian, smooth and not to heavy. A bowl of this soup with a grilled slice of Tom's bread drizzled with extra virgin olive oil can't be beat
