My company's name sake! This is the traditional soup of Trinidad & Tobago and the one I remember my paternal grandmother making in a huge pot. It is a hearty meat based soup some might compare to the consistency of a gumbo. The unique flavor of this soup is made by using an herb known locally in Trinidad as "Shadon Beni" and salted pork. Shadon Beni is a cousin to cilantro. This soup is thickened with split peas, ochra, taro root and potatoes. While this soup has many herbs and spices it is not spicy hot.
